The ULTIMATE Brazilian Cheese Bread

I've been really fortunate to have visited a number of Brazilian Steakhouses in my past. These "churrascarias" are always impressive. If you've never been to one, a churrascaria is is a type of Brazilian steakhouse featuring a unique all-you-can-eat dining experience known as rodizio. Instead of ordering from a menu, servers bring skewers of various meats—like beef, lamb, pork, and chicken—to your table, slicing them directly onto your plate. You signal to the servers whether you want more meat or are full by using a small card with a green (go) and red (stop) side.
One thing is sure...you'd better bring your appetite! Depending on which version of the meal you order, it can involve and ENDLESS skewers of meat parading by. There's also a big bar providing salads and sides, so it can be quite an overwhelming selections of options!
While I really try to save stomach space for the incredible protein, one thing it's so hard to stay away from are the Brazilian Cheese Breads known as Pão de Queijo. The flavor of these little cheesy bombs are unbelievable, but the texture is what really makes them stand out. There are many different versions of the recipes for the bread, but after experimenting with a number of them, I think I finally hit on the BEST recipe that is also easy for the home cook to make.
I'm going to share this with you today; give it a shot if you are a fan of special breads and let me know how they turn out!
Pão de Queijo
1 1/2 cups tapioca flour
2/3 cup milk
1/4 cup sharp cheddar cheese
1/4 cup parmesan cheese
1/3 cup extra virgin olive oil
1 large egg at room temperature
1 tsp kosher salt
- Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius)
- Grease a mini muffin pan with olive oil
- Place all the ingredients into a blender. Pulse until the batter is smooth, using a spatula as needed to scrape the sides of the blender for thorough mixing.
- Pour the batter into the mini-muffin pan, filling each cup to about 1/8" from the top.
- Bake at 400 degrees for 15-20 minutes, or until the bread is puffy and lightly browned.
- Remove the pan from the oven, and let the bread cool on a rack for a few minutes. Enjoy while the chewy cheese bread is warm.
